COVID-19 has presented many challenges for skilled nursing facilities, including safely serving meals to all our residents, especially those COVID-19 positive individuals, staffing, sanitation and infection control, survey issues and supply shortages. This program will focus on techniques to keep yourselves, our residents and staff safe from COVID-19 infections and healthy. This program will also address providing nutritional care and quality foods to our COVID-19 positive residents while keeping them healthy and well nourished, while minimizing risk of infection for both you and your staff. This program will address serving quality meals and foods that promote excellent meal satisfaction while overcoming staffing shortages and food/supply disruptions.
Learning Objectives
- The participant will be familiar with techniques to keep themselves, their foodservice employees and residents COVID-19 free, safe and healthy during the pandemic.
- The participant will be able to identify methods to develop and serve high quality foods and meals that result in satisfied residents, while dealing with staffing shortages and potential supply disruptions, such as pork, beef, bacon and produce.
- The participant will be able to implement systems and safely serve the COVID-19 positive residents’ quality, palatable foods to meet their nutrient needs, using appropriate sanitation and isolation precautions per CDC and CMS guidelines, while keeping other residents, foodservice and facility staff members safe and healthy.
